Ingredients
- 1tbsp vegetable oil
- 1 onion, sliced
- 350g beef sirloin, thinly sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
- 195g Sharwood’s Black Bean Stir Fry Sauce
- 1 spring onion, sliced to garnish
- 1/2 pkt marinated tofu pieces
- Handful cashew nuts
- 150g dried egg noodles
- Sesame oil
Method:
- Cook the noodles according to packet instructions, drain and mix with 1tsp sesame oil. Keep warm in the pan with the lid on.
- Heat 1 pan and add a little oil or spray. Add the beef and stir-fry for 5 minutes. Set aside. In a separate pan, fry the onion in 1tbsp oil till tender then add the tofu and stir-fry for 5 minutes until golden brown. Add cashews and peppers and cook for 2 minutes, then stir in the sauce and fry for a further 2-3 minutes. Set aside. Pour half the stir-fry into the pan with the beef and raise the heat. Fry for a further 1-2 minutes until the flavours have mixed.
- Place a bed of noodles on each plate, serve vegetarian or beef options onto the noodles and top with sliced spring onion.
