Beef or Veggie Stir Fry

Ingredients

  • 1tbsp vegetable oil
  • 1 onion, sliced
  • 350g beef sirloin, thinly sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 195g Sharwood’s Black Bean Stir Fry Sauce
  • 1 spring onion, sliced to garnish
  • 1/2  pkt marinated tofu pieces
  • Handful cashew nuts
  • 150g dried egg noodles
  • Sesame oil

Method:

  1. Cook the noodles according to packet instructions, drain and mix with 1tsp sesame oil. Keep warm in the pan with the lid on.
  2. Heat 1 pan and add a little oil or spray.  Add the beef and stir-fry for 5 minutes. Set aside. In a separate pan, fry the onion in 1tbsp oil till tender then add the tofu and stir-fry for 5 minutes until golden brown. Add cashews and peppers and cook for 2 minutes, then stir in the sauce and fry for a further 2-3 minutes. Set aside. Pour half the stir-fry into the pan with the beef and raise the heat. Fry for a further 1-2 minutes until the flavours have mixed.
  3. Place a bed of noodles on each plate, serve vegetarian or beef options onto the noodles and top with sliced spring onion.
