Pomelo or grapefruit salad

Ingredients (serves 2-3):

  • 12-16 medium cooked shrimp (prawns), peeled
  • 1 -2 pink grapefruits or half a pomelo
  • Half a courgette, raw, thinly sliced in strips
  • 1 red pepper, thinly sliced
  • 1/4 cup fresh mint, chopped
  • Green parts of spring onion
  • 1 endive, thinly sliced
  • DRESSING:
  • 1/3 cup fresh-squeezed lime juice
  • Dash of soy sauce
  • 1 tbsp brown sugar
  • Rice and/or rice crackers to serve

Method:

Make the dressing up. Combine salad ingredients in a bowl and toss with the dressing. Serve topped with rice crackers, with a separate bowl of rice.
