Black beans

Ingredients:

1.5 cups black turtle beans (or 2 cans)

Vegetable stock

Oil

1 carrot

1 onion

1 potato

2 stalks celery, sliced

1 bay leaf

1 teaspoon oregano

Juice of 1 lemon

1/2 orange, sliced

Optional: Rice, manioc powder, guacamole, chilli flakes, sour cream/ yoghurt

Method:

1. Cook the beans in the veg stock – about 1.5h – or open the cans and drain, then cover with water and add veg stock powder.

2. Chop the onion and fry till soft.

3. Grate carrot and potato. Add to the onion. Add celery. Fry for 3mins

4. Add fried veg to the beans

5. Cook till soft then add lemon juice and top with orange slices in the bowls. Can be served with sour cream, guacamole, manioc powder and chilli flakes as you wish. Rice or cornbread on the side.., or a slice of toast
