Indian Aubergine

  • 2 aubergines chopped into chunks
  • 1 Onion
  • 1 tsp turmeric
  • 1 tsp mustard seeds
  • 4 Tomatoes
  • Stock powder
  • 1 tsp Garam masala
  • 100ml Goats yogurt
  • Naan or rice to serve

1. Fry mustard seeds. Add onion, turmeric (optional chilli)
2. Add aubergine
3. Cook 5 mins on high
4. Squeexe seeds out of tomatoes and chop into chunks
5. Add toms and 175ml stock
6. Cook for 15 more mins
7. Add salt pepper and garam masala and cook one min.
8. Add yogurt and stir in just before serving
