Portobello and Halloumi Burgers

Portobello mushroom and halloumi burger

Ingredients (serves 4):

  • 4 large portobello mushrooms
  • Mixed dried herbs
  • 1 large clove garlic
  • 4 ciabatta rolls
  • 4 halloumi burger slices (or 1pk halloumi cheese)
  • 1 beef tomato
  • Tomato chutney (optional) or ketchup
  • Lettuce

(Serve with a small side salad or potato wedges.)

Method:

  1. Preheat the grill to 200C.
  2. Rub mushrooms with olive oil on their tops, place on a baking sheet gills side up and stuff with slices of garlic. Drizzle oil and scatter herbs on top. Grill for 10-12 mins or until almost dry.
  3. Wash, dry and tear up the lettuce and slice the tomato.
  4. Toast the ciabatta buns.
  5. Spread the insides of the buns with tomato chutney or ketchup (or butter)
  6. Place lettuce and tomato ready in the burger buns.
  7. Pan fry the halloumi in a dry pan until bronzed on both sides.
  8. Place halloumi in the burger buns and then add portobello mushrooms. Close up the buns and serve.
