Salade Campagnarde

Ingredients (serves 3):

  • 3 medium Waxy potatoes
  • 1 pk French beans
  • 1 Romaine lettuce
  • Handful olives
  • A few cornichons
  • 3 hard-boiled eggs
  • (optional) 1 whole Kedderton Ash Goat’s Cheese

Vinaigrette:

  • 3tbsp olive oil
  • 1 tbsp vinegar
  • 2 tsp mustard
  • 1 garlic clove, crushed
  • salt
  • pepper

Method:

  1. Boil the potatoes for 15mins or until tender. Chop.
  2. Preheat the grill.
  3. Boil the beans for 3-4mins or until tender. Set aside.
  4. Boil the eggs and peel.
  5. Wash the lettuce and dry carefully.
  6. Make the vinaigrette.
  7. Slice goat’s cheese and grill for 3 mins on a non-stick baking sheet.
  8. Combine all the blue ingredients in the salad bowl and mix with the vinaigrette.
  9. Top with the goat’s cheese and hard-boiled eggs.
