tofu slaw

Ingredients:

1/4 red cabbage

1/2 apple (optional)

1/2 block tofu, chopped into chunks

Handful cashew nuts

1tbsp mayonnaise

1tbsp yoghurt

Crushed garlic or garlic powder

Handful raisins

Method:

Slice the red cabbage super thinly.

Chop the apple into chunks.

Toast the cashews in a dry frying pan.

To make the dressing, mix mayonnaise, yoghurt and a splash of oil with garlic, salt, pepper.

Stir the dressing into the salad with all ingredients, adding the tofu last and gently.
