Vegan walnut pesto

Walnuts are absolutely delicious in pesto. The only problem is that they are not green. To make them green, add some green things like spinach, lettuce or even kale. It works. And my son will eat anything vaguely pesto-like, so we eat this a lot.

Ingredients:

  • 1/2 cup walnuts or cashews
  • 1/2 cup olive oil
  • 2-3 cups spinach or other greens (lettuce works but will not keep)
  • 12 basil leaves
  • 1/2 clove garlic
  • 1/2 tsp salt
  • 1 tbsp nutritional yeast (yes, you need it)
  • Splash of water if needed to get blades moving

Method:

Add everything to food processor and blend. Do not add to hot pasta or the basil will lose its flavour: wait till the pasta is barely above blood temperature before adding.
