Grilled Aubergines with Honey

Ingredients:

Aubergines

Olive Oil

Honey

Optional extra: feta, pomegranate seeds

 

Method:

Preheat the grill to high. Slice the aubergines thinly lengthways into strips. Brush liberally on both sides with olive oil. Place under a hot grill for 8 minutes, turning half-way through if you can be bothered.

Drizzle with honey.

Optional: scatter with crumbled feta and/or pomegranate seeds.
